Pascal Marchand Burgundy Event, Saturday, February 22 1:30pm- 4:00pm $35.
Come meet Mark Fincham, winemaker of the fantastic Pascal Marchand Burgundies! His primary responsibilities have been as winemaker at the Domaine owned by Marchand Tawse in Gevrey-Chambertin (5 hectares of vines); where he also can be seen in the vines all year round. He is also involved in all stages of the production of the Marchand Tawse wines that we will taste today; from vineyard through to the bottling line. Before coming to Burgundy which was already a 20 year passion, he also worked at the award-winning Tawse Winery in Niagara, Ontario.
Mark came to France from England in 1992 to spend a year writing a book. He then spent 16 years in Chateauneuf du Pape at the Domaine de Pegau, founding a family and working at the Domaine, in which time he also studied winemaking at the local ‘Lycée Viticole’ and farmed vineyards in the Costières de Nîmes, where he made his wine, ‘Red Note’. He is also a lead partner in the small Rhone négociant Feraud-Brunel and has made numerous trips to the US to promote these wines.

Italian Wine Specialist Certification, Five Saturdays, March 1, 8, 15, 29 and (Exam) April 5 $590.
The North American Sommelier Association is proud to present the “Italian Wine Specialist” certification recognized throughout the world. The course is designed around the Italian Sommelier Association curricula, recognized as the leading educational and consulting authority on Italian wines. The teachers are all native Italians and certified sommeliers by the “Associazione Italiana Sommelier” in Italy. The Italian Sommelier Association (ISA) was founded in 1965 and is the foremost authority in wine education and Sommelier services. Globally, it is part of the W.S.A, ‘World Sommelier Association’, the largest Sommelier Association in the world, known for their extremely high curriculum standards. The North American Sommelier Association, recently opened in Los Angeles, is affiliated with WSA and has the right and exclusivity of using the ISA curricula in the United States. This course consists of 18 hours of class time and tasting with an exam in order to get the certification, issued by the North American Sommelier Association and approved by the “Associazione Italiana Sommelier” and WSA. The class will explore all the 20 wine regions of Italy, their wine laws, grape varietals and include a brief overview of cuisine and culture.
Killer Riesling, Monday, March 3 $53.
Tonight’s class is all-fierce, all killer, all Riesling, all the time baby! No other grape, well maybe Pinot Noir, makes such terroir driven and characterful wines. Since Riesling makes quite possibly the world’s greatest white wine, tonight we’ll focus on the three countries that produce the best: Germany, France, and Austria. None of tonight’s wines will be dessert wines, though not all will be dry either. Just what on earth does that mean? Come find out. What You Absolutely Need to Know About Wine, Monday, March 10 $53.
This class was previously named Absolute Beginning Wine Appreciation, but that title limited the participants to people who knew that didn’t know the basics of wine. Truth be told, there is a lot of fundamental information about wine that most people have just skipped over in order to get to the drinking part! So whether a beginner or hardened vet, this class will teach you something you didn’t know or at least were not sure of in the complex, wonderful world of wine. While based on the information offered in Absolute Beginners, this is a newly structured Power Point type of class presented along with nine great wines to illustrate the information. The most heard comments after this class are usually along the lines of “I’ve been drinking wine for 15 years, going tasting in Santa Barbara and Napa, etc, and I learned more about wine in the first 20 minutes of this class than I did in all that time!” Join Tasting & Seminars Director JB Severin for an entertaining revelation.
NASA Olive Oil Certification, Four Evenings, Wednesday, March 19, Thursday, March 20, Friday, March 21 and (Exam) Wednesday, April 2
The North American Sommelier Association (NASA) is proud to present the “Master of Olive Oil” certification. The course is inspired by the Italian Sommelier Association (ISA) curricula, and will be taught by Massimo Billetto, a certified ISA “Sommelier of Olive Oil.” Participants who complete the course and pass the exam will be awarded a certificate issued by NASA and recognized in the USA and Canada. The Italian Sommelier Association (ISA) was founded in 1965 and is the foremost authority in wine education and Sommelier services. In addition to wine, the ISA also certify professionals in the art of olive oil tasting. This course includes 3 evenings (2.5 hours each) of instruction, plus an exam. The course will cover production techniques, olive oil tasting techniques and the main varieties of olive oils. Extra virgin olive oils from across the globe (Italy, Spain, Greece, North Africa, USA and Australia) will be tasted, and one evening will be spent delving into the regional olive oils from Italy. This course begins at 6:30 p.m.
